A quick summer starter of tomatoes and black olive paste

We made this as a really quick starter this evening, nice and fresh.  This serves 2.


Tomatoes with olive paste (and goats' cheese)


three ripe, red tomatoes (halved and seeded)
two heaped tablespoons of black olive paste
six or so basil leaves (shredded)
50g fresh, white goats' cheese (optional)
extra virgin olive oil, salt and pepper to season

Wash the tomatoes and slice in half, scoop out the seeds.  If using the goats' cheese, slice and place a sliver (thickness of a pound coin) in the centre of the tomato half.  Then add a thin layer of the olive paste, and the shredded basil.  Put on a plate and season with a glug of good olive oil over the tomatoes and salt and pepper.
