Citrus cheesecake from Hello!

That bastion of celebrity cheer has a recipe for Creamy Lime Cheesecake this month.  It looked rather nice, so I have amended it slightly to my tastes and thought I'd jot it down to try:

Hello! Lime Cheesecake

50g butter
175g ameretti biscuits (crushed)
225g cream cheese
25g caster sugar
1 medium free range egg (yolk and white separeted)
75ml double cream
grated zest of 1/2 lime
strips of lime peel to decorate

Melt the butter and stir in the crushed biscuits.  Press the mixture into the base of a shallow pie dish.

For the filling beak the cream cheese with the sugar, egg yolk, cream and lime zest until smooth.  Wisk the egg whites until stiff and fold in.

Place the flan ring with biscuit base on a baking sheet and pour over the filling mixture.  Bake in oven at 180 degrees for 40-45 mins until set.  Remove from oven and allow to cool.  Scatter with strips of lime peel to decorate.
